Pineapple Dream Frosting

Ingredients:
- 2 cups (90 g) Aromacraft freeze-dried pineapple powder
- 1 ½ cups (340 g) unsalted butter, softened
- 5 ½ cups (660 g) confectioners’ sugar, sifted
- 1 tablespoon vanilla extract
- ⅛ teaspoon salt
- 6 tablespoons heavy cream
Instructions:
- In the bowl of a stand mixer or a large mixing bowl with a handheld electric mixer, beat the softened butter on medium-high speed until creamy and pale in colour, approximately 5 minutes.
- Gradually add half of the sifted confectioners’ sugar to the butter, beating on low speed until fully moistened, then increase the speed to medium-high and beat until well incorporated, about 3-5 minutes.
- Add the remaining confectioners’ sugar and pineapple powder to the mixture, beating on low speed until fully moistened, then increase the speed to medium-high and beat until well incorporated, about 3-5 minutes.
- Incorporate the vanilla extract and salt into the mixture. Gradually add 3 tablespoons of heavy cream while mixing on low speed, then increase the speed to medium-high and beat until the cream is fully incorporated, about 3-5 minutes. Remember to scrape down the sides and bottom of the bowl halfway through mixing.
- Check the consistency of the frosting and add more heavy cream, ½ tablespoon at a time, if needed. The frosting should be soft and spreadable while still holding its shape.

Note : This recipe makes enough to frost a double layer cake or 24-36 cupcakes. Halve the recipe to make enough for 12-18 cupcakes or a single layer cake.
